Corvina

Corvina is a dark-skinned grape variety primarily grown in the Veneto region of Northeast Italy. This grape is one of the three key varietals used to make the classic Italian wine, Amarone, and its sweeter counterpart, Recioto. It is cherished for the unique, cherry-dominant flavour profile it imparts, as well as its ability to endure the appassimento process, whereby grapes are partially dried before fermentation to intensify their flavours and sweetness.

The physical characteristics of the Corvina grape greatly contribute to these qualities. It has a large, winged cluster with medium-sized, elliptical berries. The thick skin of the fruit protects it during the drying process, preventing the onset of rot. This grape is rigorously managed on the vine, involving techniques such as green harvesting to restrict yields, hone the flavours of the remaining fruit and minimise any dilution of the characteristically vibrant acidity.
