The name COS represents the initials of its founders - Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. Young visionaries who took the bold step to venture into the then untapped Sicilian viticulture.

The wines from COS emanate a distinct character embodying the careful selection of grape variety, diligent production method and a delicate ageing process. The Amphora line in particular has gained them much fame, as the wine undergoes fermentation in terracotta amphorae, a traditional approach that allows the flavours to develop to their full potency thereby enhancing the wine’s inherent qualities.
