Rockford’s Sparkling Black Shiraz is made from a base wine originating from a 200-dozen bottle treasure trove of mature shiraz made by Robert O’Callaghan in the late 1970s. Open fermented, basket pressed and matured in seasoned oak, this aged material is the mother lode of Rockford’s modified solera, a three-year fractional blending system. Oxidised base material provides soft textures and flavours. Hallmarks of this celebratory and timeless sparkling red wine are velvety, smooth, aged textures and richness of fruit.
